We've Gone Canning Crazy!

Jillian is her name, apple butter is her game! We are all about some apple butter around here. Even Jason was mesmerized by Amy's Apple Peeler/Corer/Slicer & Stand and had me phone her at 8:30 p.m. to place a Pampered Chef order so that he could own one himself. I made my last batch with Splenda instead of sugar and it was just as tasty (pass the biscuits please!). I slightly altered the apple butter recipe from my earlier post, so I will share my variation below. Also, Jill replaced the cloves with allspice...yum!

APPLE BUTTER
*Enough apples to completely fill a Crock Pot
*3 cups sugar or Splenda
*4 teaspoons cinnamon
*1/4 teaspoon ground cloves
*1 teaspoon salt

Place peeled, cored & sliced apples in Crock Pot. Pour remaining ingredients over apples. Cook on high for one hour. Lower heat to low and cook all day until mixture is thick and dark. Mix until smooth with either potato masher, whisk or hand mixer. Pour into canning jars. Boil jar lids and place on jars along with rings. Lids will "pop" when sealed.

Ooh yummy! I may have to give this a try. I loved getting to see you today, and it was really nice to meet Amy. I am excited you love your china. I knew you would. I hope Jillian and Jason like it as well.
